This is my go -to casserole for big gatherings and/or baby meals – also my kids think the “crunch” are potato chips – but they are the water chestnuts (they still haven’t figured it out yet…)

3 cups cooked chicken dices (3-4 breasts for those of us who have no idea what 3 cups measures to)

1 box long grain Uncle Bens White and Wild Rcie Original or Fast Cook recipe

1 can (14 1/2) oz) French Style Green Beans, drained

1 small jar pimento (2 oz) drained and diced

1 small can water chestnuts (8 oz) drained and diced

1 can cream of celery – (or cream of anything that is in your pantry) – undiluted

3/4 cup mayo

Salt and pepper to taste


Boil or pan bake chicken – allow to cool – dice or shred

Prepare rice according to package – Combine with ingredients

Put everything in ungreased 10″ casserole dish

Bake at 350 degrees for 35- 40 mins

I also add the crunchy onions if I have them on top or sometimes bread crumbs.  Its a fun and easy recipe to play around with.

Left overs are even better – so we always double the entire recipe!
